Cooking Class: Masa

On September 14, we're kicking off our Poca Madre cooking class series with an afternoon exploring masa, a foundational ingredient in Mexican cooking and the basis of our 12-course taco omakase. Enjoy a welcome cocktail as chef Faiz Ally shares his techniques for turning masa into magic. Learn about the nixtamalization process, different corn varietals, corn grinding and how to prepare tortillas, sopes and tetelas.
